Another quality result for the family Buršić, who has been practising olive growing since 1998 in the village of Nova Vas, to the south of Brtonigla, in the fertile valley of Quieto. Here, on a specialized olive surface of 7 hectares, Maria and Franko Buršić cultivate 2,200 olive trees, which produced 230 quintals of olives in the last harvest, equal to a yield of 30 hectolitres of oil. There are two Extra Virgin selections: the Monocultivar Buršić - Buža and especially the excellent De Kleva, which we recommend. It is a beautiful intense limpid golden yellow colour with warm green hues. Its aroma is ample and definite, endowed with vegetal hints of freshly mown grass, artichoke and chicory, enriched by fragrant notes of basil and mint. Its taste is rotund and complex, with a fruity flavour of unripe tomato, white apple and a note of lettuce and almond. Bitterness is distinct and pungency is present. It would be ideal on grilled porcini mushrooms, octopus salads, tomatoes au gratin, baked radicchio, bean soups, pasta with sausages, steamed swordfish, grilled game birds or animals, medium mature cheese.
