Nino Činić is situated in Buje, an historical town in the north of the Istrian peninsula. Founded in 1996 and still run by Nino Činić, the farm has a 3-hectare specialized olive grove with 700 trees of typical local varieties. In the last harvest 55 quintals of olives were produced and 10 purchased, with a yield of 10 hectolitres of extra virgin olive oil.
We recommend the excellent farm selection, the Extra Virgin Oleum Vitae, which is an intense limpid golden yellow colour with light green hues. Its aroma is definite and ample, endowed with elegant fruity hints of medium ripe tomato, white apple and banana, enriched by notes of pistachio and almond. Its taste is complex and rotund, with a vegetal flavour of broad beans, lettuce, celery and officinal herbs, especially field balm and sage. Bitterness is definite and pungency is distinct and balanced.
It would be ideal on chianina meat carpaccio with Caesar's mushrooms, cep mushroom salads, barbecued radicchio, bean soups, first courses with sausages, bluefish au gratin, grilled poultry or pork, pasta filata mature cheese.
